Badam Katli Ingredients:
Almonds – 1 cup Powdered Sugar – 1 cup Ghee – 2 tbsp Milk – ½ cup Saffron threads – 10-12
How to make Almond katli:
First of all, the almonds have to be soaked for a few hours. For this, heat water in a bowl and put almonds in it. As long as the almonds are getting wet, we will do the rest of the work. Also, pour half a bowl of milk in a bowl, then put saffron threads in it and keep it aside.
After 15 minutes, take out all the peels of almonds. Peel off with hands. Now heat water in a bowl, put peeled almonds in it and keep it covered for 1 hour. After 1 hour, when the almonds swell, put them in a mixer and grind them finely. Put 4 spoons of milk and almonds in the mixie and stir. If you find it dry, add some more milk and stir. Take out the paste in a bowl.
Now put 2 spoons of ghee in a non stick pan and heat it, then add almond paste to it. Now it has to be stirred continuously until it becomes completely thick. Remember it has to run continuously. When you find the mixture thick, check by putting it on your finger, if it looks a little thin and wet, then cook the mixture for a while. When it gets solid, take it out of the pan and keep it in a bowl. After this let it cool down. Meanwhile, grease a butter paper with little ghee all around and prepare it by applying ghee on the rolling pin. After the mixture cools down, make a big ball and roll it on butter paper with light hands. Keep it a little thick. When it solidifies more, cut it with the help of a knife. After cutting, keep it in the fridge and freeze it. Your badam katli is ready.
