If not then today we have brought you the recipe of making Mutton Yakhni Biryani. This is a very tasty and delicious dish. It is cooked by adding lamb mutton. Yakhni present in it means stock of meat. This different biryani dish is cooked with rice and mutton stock. This can prove to be a great dish for you both in lunch and dinner, so let’s know the recipe of making Mutton Yakhni Biryani-
Ingredients for making Mutton Yakhni Biryani-
1 kg lamb mutton
-2 1/2 cups basmati rice soaked for 25 minutes
-3/4 cup Chana soaked for 30 minutes
– 1 tbsp ginger garlic paste
-1/2 cup Onion fried till golden brown
– 1 tsp black pepper
-1 bay leaf
– 1 tbsp coriander seeds
– 1 tsp fennel
-1 tsp cumin
-1 or 2 sticks cinnamon
– 1 tsp garam masala powder
– 1 tsp coriander powder
-1 or 2 tbsp ghee
to grind –
-5 to 6 green chilies
1 bunch coriander
Recipe to make Mutton Yakhni Biryani-
To make this, first of all wash the mutton with water two-three times.
Then you take out the water from it and keep it aside.
After this, tie coriander and fennel in a muslin cloth and prepare it.
Then put some oil in the cooker and heat it.
After this, add bay leaves and cloves and crackle it.
Then you add ginger-garlic paste and onion and fry it.
After this, add the cleaned mutton to it and fry on high flame for about 5 minutes.
Then you put salt and water in it and let it come to a boil.
After this, put all the tied spices in it and close the lid of the pan.
Then you cook it for about 3 to 5 whistles and remove it from the flame.
After this, sieve the stock with the help of a colander and collect the stock and keep it aside.
Then you take out the tied spice and bay leaf from it and keep it aside.
After this, put ghee in a heavy bottomed pan and heat it.
Then you add cumin, black pepper, cinnamon, clove and cardamom to it and fry for some time.
After this, add ginger garlic paste to it and fry till the raw smell comes.
Then you make a paste by adding green chilies and green coriander in a blender and adding water as required.
After this, you put this paste in the pan and fry it well till the oil separates.
Then you add coriander powder and garam masala to it and fry for a while.
After this, add curd to it and cook it well till it becomes thick.
Then you add soaked rice, chana dal and cooked mutton to it and fry.
After this you add stock to it and mix well.
Then you test the spices once more and boil them by adding salt as required.
After this, cover it in low flame and cook it for about 20 to 25 minutes.
Then pour 1 tablespoon of ghee over the rice, mix it with light hands and remove it from the flame.
After this, garnish it with fried onions and serve it hot with spicy chicken curry.
